Basic Information:
Cabbage is a leafy vegetable staple to Indian kitchens. It has a waxy coating, which often gives the leaf a grey-green or blue-green colour. Cabbage is eaten across almost every Indian terrain as it grows in mild and cool climates but can even tolerate frost as well. Cabbage is very closely related to kale, broccoli, collards and Brussels sprouts.

Cabbage can be consumed in multiple ways like steamed, sauteed, fried, juiced, raw, and fermented. Uncooked cabbage makes a crispy addition to salads and coleslaws. Cooked cabbage can be found in soups, stews, and stir-fries. Its fermented versions like kimchi and sauerkraut are both healthy and unique in their flavour profile.
