In South India, brinjal can be grown round the year. Therefore the delightful dish, baigan ka bharta could be prepared anytime during the year.

Basic Information:
This famous and highly loved and adored dish is made through following a list of simple steps, Firstly the brinjal is roasted and then chopped finely, in another pan oil is left to heaten up followed by adding onion, garlic and chopped green chillies, then a puree of tomatoes is added to the combination, lastly the smashed and chopped brinjal is added to the pan and mixed well.

Health and nutrition:
Baigan bharta has a low glycemic index. Hence, they do not spike the glucose level as they are absorbed slowly. Brinjal is a good source of fibre. They are also rich in folate which is required for producing RBCs. It is a good food to have during pregnancy.
