Basic Information:
Lemon is a yellow or pale yellow fruit used in numerous ways in making different food and drinks across global cuisines. Lemons have a sharp, sour taste and were the primary commercial source of citric acid before the development of fermentation-based processes.

Health & Nutritional Information:
Lemon juice is about 5% citric acid, and has a pH of 2 to 3. Lemons contain very little fat and protein and are mainly made up of carbs and water. The carbohydrates in lemons are primarily composed of fibres and simple sugars, such as glucose, fructose, and sucrose. The main fibre in lemons is pectin which helps lower blood sugar levels. Lemons may also help protect against anaemia, prevent the formation of kidney stones, enhance the immune system, and protect against several diseases. Lemon oil is also commonly used in aromatherapy.

Best Uses:
The juice, zest, and pulp are often used in cooking vegetables, fish, and other meat for an enhanced flavour. Lemon is also used to flavour drinks, such as lemonade or soft drinks. The whole lemon is used to make marmalade, lemon curd and lemon liqueur while lemon slices and lemon rind are used as garnish for food and drinks.
